The Vegan Chocolate Chip Cookies Non-Vegans Will Love

My daughter recently adopted a vegan lifestyle. Not only does she follow a vegan diet, she has transitioned her wardrobe to non-animal based fabrics, donated her Uggs, and replaced her beauty products. Since  baking is one of my love languages, I was eager to find vegan recipes I could make for her. Luckily my friend had a fantastic recipe for vegan chocolate chip cookies that has become a favorite no matter whom I’m baking for.

The dough comes together a bit differently than traditional cookie recipes, but the final product is a delicious cake-y cookie even my carnivore husband loves.

Delicious Vegan Chocolate Chip Cookie Recipe

The only special ingredients this vegan chocolate chip cookie recipe calls for is coconut oil and vegan chocolate chips. I’ve heard that Trader Joe’s chocolate chips are vegan, but I like the slightly larger size of these Enjoy Life brand dark chocolate morsels.

Ingredients

  • ยฝ cup coconut oil
  • 1 cup brown sugar, packed
  • ยผ cup almond milk* 
  • 1 tsp vanilla extract
  • 2 cups all purpose flour 
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ยฝ tsp salt
  • 1 cup vegan chocolate chips 

*I use unsweetened vanilla almond milk because that’s what I keep on hand for my baked oatmeal, which I routinely make vegan by omitting the egg.

Directions 

  • Pre-heat oven to 350 degrees.
  • Line cookie sheets with parchment paper.
  • In a small bowl, mix together flour, baking soda, baking powder, and salt, and set aside.
  • In a mixing bowl, blend coconut oil and brown sugar with a fork, then a mixer until well blended.
  • Mix in almond milk and vanilla. At this point, the dough may seem very wet.
  • Add the dry ingredients in several batches, mixing well each time. At this point the dough will be crumbly, like the early stage of pie crust dough.
  • Add the chocolate chips and distribute throughout the dough.

  • Using a tablespoon or scoop, form balls of dough in your hands, pressing the dough together as needed.
  • Place on cookie sheet lined with parchment paper, using your palm to flatten if necessary. 

  • Bake for 8-10 minutes, until cookies crack on top and are golden on the edges.

I still enjoy these vegan chocolate chip cookies with a glass of milk, but my daughter has hers with almond milk.

    They look good! I just couldn’t go vegan, but I have a couple families in my practice who have and their kids are really healthy. I wonder if there’s something to it…

      The more popular vegan diets become, the easier it gets to not be healthy, but it does rule out a lot of unhealthy options!

    Ooh, those look great! I really like the flavor of cookies made with coconut oil- and there are ways around the eggs too as you found. That definitely takes more planning to have a vegan daughter! I guess since she’s not living at home it’s not as big of a transition for you in your cooking.
