ndividual Meatloaf Recipe

Now that the weather is getting cooler, I am craving comfort food and don’t mind turning on the oven. One of my favorite things to make when I have a bit of time is my individual meatloaf recipe.

My recipe  is based on a Cooking Light meatloaf recipe, but I like to make individual meatloaves because they cook faster and more evenly.

Individual Meatloves

  • YIELD: 6 individual meatloaves (6 Servings)
  • PREP: 15 mins
  • COOK: 35 mins
  • READY IN: 50 mins

Ingredients

Instructions

  1. Preheat oven to 400F. 
  2. Prepare diced onion.
  3. Prepare diced mushrooms.
  4. Place meat and all other ingredients in a large mixing bowl and blend well. 
  5. Fold in onion and mushrooms and blend well.
  6. Form into individual meatloaves and top with a dollop of barbeque sauce.
  7. Bake at 400F for 35 minutes, or until thoroughly cooked.

While mashed potatoes is a traditional side dish for meatloaf, I like to make mashed cauliflower–not as a diet “trick,” but because I really like them!

My “recipe” couldn’t be easier: I microwave steam-in-bag frozen cauliflower according to the package directions, let it sit for a few minutes to make sure the cauliflower is thoroughly cooked, and then use my immersion blender to “mash” it. You could season it with milk and butter, but I usually just add salt and pepper.

    OK I NEED TO RETRY the mashed cauliflower.
    I never make it “right” and it NEVER RESEMBLES mashed taters even remotely.

  3. love doing the cauliflower, but seasoning with garlic salt and onion powder. For those who can do dairy a little bit of greek yogurt really helps make them seem like potatoes!

    I love doing mini meatloafs, for the same reason! I usually put spinach in mine, to help boost a little greens. I can not for the life of me get on board with mashed cauliflower but I’d be willing to try (again…) thanks 🙂

      My son would revolt if I tried to sneak anything green into his burger, but that might work for my husband when he’s not around!
