When ViSalus asked me to contribute to their 90 for 90 recipe collection using their Vi-Shape® nutritional shake mix, I wasn’t sure that I could come up with a recipe good enough to share with others, but after I tested out the product that they sent me in three of my favorite recipes, I ended up with three recipes that I definitely will be making again.I guess there is a reason they call Vi-Shape®

My recipe for Vi-Shape® Oatmeal Raisin Chocolate Chip Cookies (in the Recipage section below) was inspired by Abby’s Skinny Oatmeal Raisin Cookies.

Gluten-Free* Oatmeal Raisin Chocolate Chip Cookies

*If you are making these for someone with celiac disease or a gluten sensitivity, make sure you use certified gluten-free oats.

Ingredients

Instructions

  1. Preheat oven to 350F and line baking sheet with parchment paper.
  2. Mix all ingredients in a bowl until well blended. (Batter will be gloppy.)
  3. Form cookies on parchment paper using a heaping tablespoon of batter for each cookie.
  4. Bake at 350F for 20 minutes, or until cookies are lightly browned around the edges.

    Those look great. I'm with Kierston – I use protein powder in recipes and hardly ever have a protein shake 🙂

  4. I have cooked with protein powders, but never baked with them. I would make pancakes, but now that I can no longer eat eggs, I am sad! lol.
