Five Ways To Enjoy Eating More Vegetables

We are all familiar with the “5-A-Day” and “Strive for Five” campaigns. We are supposed to eat at least five servings of fruits and vegetables a day. I usually am pretty good about that, but my vegetable consumption hit a low over the holidays. Now that I am getting back on track, here are five ways I enjoy eating more vegetables.

Strive For Five

1. I add a handful of spinach to my chocolate protein smoothie.

2.  I add extra vegetables to my Eggbeaters® omelets.

3.  I pack a salad for lunch at work.

4.  I bring a baggie of raw veggies to crunch on at work.

I always put a layer (a LARGE LAYER lol) of Spinach down on my plates before I plate the rest of my meal… I always get an extra 2-5 cups of leafy greens that way… I never have a problem with getting a bunch of veggies though, I am a veggie wh***. LOL! Actually, I think I eat TOO MAN veggies! Ah ha ha!!

I've been throwing spinach into everything lately so I think I've got it! 🙂 Could probably do with a few more though (or at least a little variety hehe)

Lately I've been adding a thick layer of spinach to my plate before serving my food. This has helped with dinner & lunch. Sometimes I snack on raw veggies….I need to get better about this!
