Welcome To The January 2023 Ultimate Coffee Date

If we were having coffee, I would tell you that my son appreciated his new coffee grinder, even if it wasn’t the most expensive model I could find. He used it to grind espresso for my daughter-in-law’s tiramisu recipe, which was amazing.

How can something with so much cream taste so light?

The Beef Wellington he made also turned out beautifully!

If we were having coffee, I would ask you about the most random gift you received. I am not complaining, but I’m not sure why my mother-in-law sent me 8 oz. of herbs de Provence. At least she also gave me a canister to keep them in.

Any recipes ideas?

Speaking of gifts from my mother-in-law, I continue to love my Aerogarden. It’s not really the right model for tomatoes, but my plants are still growing strong and bearing fruit!

Speaking of growing, if we were having coffee, I would share a simple mantra I am using to remind myself that self-care is essential to success. I shared my nudge word for 2023 on Tuesday, but nourish to flourish is a practical reminder that I need to take care of myself in order to be my best in whatever arena I’m playing in.

    I really like your self-care mantra – such an important reminder!

    I can’t believe how well your tomato plant is doing. I wish I had enough counter space in my kitchen for an Aerogarden. Maybe that’s something I can work into our kitchen remodel project.

    I think we’ve used Herbs de Provence only a few times, so I’m not the person to make suggestions! That is definitely an odd gift. My sister gave me a sweater shaver, so yeah. Odd. Apparently, pilling sweaters are an issue for her and she is excited about this solution.

    Your son and DILs food look amazing! And yes, how can tiramisu be so rich and light at the same time?

      Weren’t sweater shavers big in the 80s? I think that’s when I first got one, and probably the last time I used one! 😉

    I kind of like the idea of the Herbs de Provence gift! I got the usual nada from my MIL. Haha! That wellington looks absolutely stunning! Glad the coffee grinder was suitable! Your son sounds like quite the epicurean!

  4. Well, it was kind of your MIL to think of you. My MIL sends checks (as does my mother) which I prefer. My mother also sends boxes of sweets — that I really don’t want! Love that you can grow tomatoes year round inside.

    We have some leftover grilled steak and I’m going to try an experiment and wrap it in puff pastry. Not exactly real beef wellington, and I’m a girl who likes her steak rare, but with puff pastry — how can it be bad?

    Self care is SO important. I love your mantra (and that tiramisu looks amazing).

    That spice gift makes me laugh. I studied in Nice and that the gift I brought home to everyone.

    Your son is quite a cook! My son has been cooking too, but mostly pasta. Maybe he’ll get more fancy as time goes by.
    Somehow I missed your post on Tuesday, but went back and read it now. I like your “nudge word”, and I like your self-care mantra- especially since my nudge word for 2023 is “nourish.”
    You’ll have to let us know what you do with the herbs!

  9. Ha that is an odd gift. I think those spices are used a lot for poultry dishes. I am an aerogarden flunky. I mean, seriously, how can I kill plants that literally tell you when to water and feed them. Ironically, I noticed that my little orchid plants love the light from it. I keep them next to it and they have bloomed again. I like flourish for you! Yes, taking a little more self care can do wonders!

    That tiramisu looks amazing; and I bet those tomatoes are mouth watering good. I don’t have any recipe suggestions for using your herbs de Provence, but you’ll have to let us know what yummy things you come up with.

  11. Herbs de Provence are delish on roasted chicken or salmon. A french friend taught me that!

    My most random gift was an apron that said “Baking is my Therapy” and an original Betty Crocker cookbook. If it was given ironically, I would have laughed. Sadly it wasn’t. My husband’s stepmom gave a bunch of us gifts she’s like to receive. Womp womp.

    The tiramasu looks amazing….and now I’m hungry! Haha. I’ve never had beef wellington but it looks really tasty too!

    Yay on the aerogarden success.
    Question is who defines random. I mean if someone looked at what I got from my brother, SIL, it looks so random-TJ’s dark chocolate covered peppermint joe joes, but they’re not random at all because <3 We don't really exchange traditional gifts so nothing too random. Or it's all so random it's normal
    Was there a dish that needs the herbs?

    I see the best before date is December 2024… barely two years to use all those herbs, ha!
    Give half of it to your son… with his cooking skills, I’m sure he’ll manage to get through it. 🙂
    I got a new bag this week made of recycled truck tarp. I love it!

    Nourish to flourish is a great mantra for the year. I don’t have one yet, but I definitely do want to focus more on self-care.

    Guess what gift I got for Ditiro for Christmas? A coffee grinder! Not the most expensive either but seems to work pretty well. I used to make oat flour from my oats, and it was super-fast. Nourish to flourish is a beautiful mantra.

    I am just getting back into blogging after years off. Not sure how this link up thing works, but going to try and figure it out and join in on the next one. It was fun reading.

    I’m currently recovering from ankle surgery so the best I can do for running right now is read about other people running. I can’t wait to be cleared to run again!

    Also, are you growing tomatoes indoors? I am so clueless at gardening, but I’m making my first attempt at container/indoor gardening and I didn’t think you could grow tomatoes indoors.

      Hey, and welcome! The theme for the monthly “coffee date” link up is really lose – just write about whatever is on your mind. When the link up is live, you can add your post to the link up. Then just visit the other posts and others will reciprocate. The next one is this coming Friday (Feb 3).

      This same group also does a weekly link up where we recap our workouts — that one is on Sundays.

      As for my tomatoes, I have an Aerogarden I got for Christmas a few years ago. It’s technically not meant for tomatoes (they sell bigger ones) but it worked! The key is the special light and plant food I guess — all they get is that and water.
