While other social events are canceled, isn’t it great we still can get together at home for our Ultimate Coffee Date? The virtual get together Deborah and I host is fully compliant with all social distancing guidelines and stay-at-home orders. Now more than ever, it’s important to stay connected and keep in touch.

Together At Home For Coffee

If we were having coffee, I would ask how you’re doing. I know we talked about this last time, but after being at home another month I’m asking again.

If we were having coffee, I would offer you a plate of Deborah’s Cranberry Oatmeal Breakfast Cookies, which I made with chopped pecans instead of chocolate chips. They are perfect for a pre-workout snack or to keep my stomach from growling during late morning conference calls.

Or perhaps you’d like a slice of this mushroom quiche inspired by an old Cooking Light recipe? Even working at home, I like the convenience of a ready-made breakfast.

If we were having coffee, I would ask if you are quarantining your packages like my husband is? I don’t know why he didn’t just wipe these down, but he felt better keeping his coffee pods in the garage for a few days instead.

If we were having coffee, I would tell you I finished the Washington, D.C. puzzle I had started the last time we got together at home. They call it a “4-D” puzzle because it has a 3-D aspect and a time aspect. The base layer is a map of D.C. from 1792, the second layer is a more recent map, and plastic buildings snap in place for a 3-D effect.

It was harder then I expected, but I’m still tempted by the other cities in the series: New York, Paris, London ….

    We just got our oven fixed so I’ve been wanting to try baking something–those cookies look good! We’ve been quarantining our packages lately too.
    That 3D puzzle looks awesome!

    I have never heard of a 4D puzzle! Adding the time aspect is genius!
    Over chai, I would tell you that I must be the only person on the planet that hasn’t baked anything (yet).

    I would tell you, over this virtual gathering, that the puzzle looks so fun! As a kid, we always had a card table set up over Christmas Break, with a jigsaw puzzle in process. I miss those days! Even though they were the traditional 2D ones, they still were a lot of fun to conquer!

      This is the only 4-D one I’ve done. I started doing puzzles again last summer and splurged on a nice looking card table so I can leave it up in the family room without hating the sight of it.

  4. I haven’t seen 4D puzzles before! I like doing puzzles and wanted to order some but they’ve almost impossible to find.

    I pinned Deborah’s recipe but haven’t tried it yet. Yours look so good and I like the idea of using the pecans.

      I’ve heard that about puzzles. I’m so glad they topped my Christmas gift list. The breakfast cookies are great. I’m making them more than my baked oatmeal these days.

  5. That puzzle looks amazing!

    I made some GF brownies yesterday that I thought were damn good. My husband’s response? They’re ok. Although for him, ok usually equals good, he’s not exactly effusive with praise. We’ll see if he asks for them, that’s really the litmus test of whether or not he liked something.

    We’re still under stay at home, although upstate NY was not hit as hard as downstate.

    We leave packages in the garage for a day, usually. Figure it’s not going to hurt them.

    I made Marcia’s GF chocolate chip cookies this week and wow! were they good. But I do have that 50# bag of flour and so I’ll get back to gluten baking…

      LOL, having that much flour around would drive me to bake more. At least you have your sons around to help with the eating!

      My husband has some crazy ideas …. I thought a map would be easy, but there are not too many color changes so you really have to focus on the details.

    Those breakfast cookies look delicious! I like your idea of substituting pecans for chocolate chips. I am a chocolate-lover but not for breakfast. That 4-D puzzle map looks challenging to put together. Now is a good time to do it! Thanks for hosting.

      That was my thinking on the recipe variation. I’m happy to eat chocolate at breakfast, but it’s better if I don’t wake up those taste buds!

  9. I’m going to check out your quiche recipe! I need another good breakfast option! We’ve been puzzling over here, too! We just finished our 4th 1000 piece puzzle of the pandemic. It’s so addictive. I have ups and downs but am doing OK. All things considered.

      You’ve done some fun puzzles! The quiche recipe is easy and versatile. I made a crustless version this week (more true to the Cooking Light calorie count, LOL) with spinach.

    Those breakfast cookies look amazing!! I might need those in my life. As for the quiche….well, I don’t do mushrooms so you’re free to enjoy that all by yourself. haha. And honestly, I’m not really “working” from home, per se (personal trainer/crossfit coach – hard to do those from home) but I still appreciate a ready-made breakfast.

      You can make the quiche without mushrooms – my husband prefers the ham and cheese version. 😉 The first few weeks I was home I enjoyed making eggs and toast for breakfast, but then I got lazy!

    I have still being doing a little bit of meal prep even while working from home. I try to have my lunches prepped so that I don’t waste too much of my lunch break cooking. It’s been working pretty well so far!

      I’m still mostly having leftovers for lunch. I usually end up having to eat while listening in to a conference call — or vice versa.

    That puzzle is incredibly cool. I had to take a break because I was doing some crafts for little man’s birthday, but I may start another one this weekend. We shall see.

    That quiche looks delicious! I made on this week with spinach and bacon. It was yummy.

    I’m ok. My allergies have been bothering me a bit, so it’s been hard to stay focused.

      Spinach and bacon is a classic combination! We’ve had so much rain this week my allergies got drowned out.

  13. we are cooking up a storm over here too! So glad that you liked my cookies. They are a nice treat but still healthy. Getting a little stir crazy! Hope by next month’s coffee date things are looking up and we may be outside more

  14. I haven’t done any baking (other than banana bread) since before Christmas. I keep saying I will, but never get around to putting the items I need on our list.

      I think I kept thinking I was out of chocolate chips because I ended up with a lot of them! I also have stuff to make brownies ….. I am rationing the flour though!

    I’ve been baking about one batch of brownies each month…. about a month apart. Imagine that… LOL so nothing really new there. I’ve been seeing everyone’s puzzle pictures on Instagram and thinking how much fun that looks. But honestly my job hasn’t changed and I don’t have the table space right now. But it’s definitely something I’m keeping in the back of my mind.

    I did a 3D puzzle many years ago but never 4D – it looks pretty cool! Having cats and now an infant, makes it harder to work on puzzles in this house lol!

      Puzzles with a cat would be even more challenging than puzzles with Scooby! It took 3 puzzles before I realized he was stealing and eating pieces.
