Garden Vegetable Gazpacho Recipe

Once again, my Mom has been sharing the bounty of her garden with me. When she was overrun with too many tomatoes, cucumbers and green peppers, I knew I had to make garden vegetable gazpacho.

Gazpacho
I dug up an old Cooking Light recipe, hauled out my Cuisine Art, and started chopping.

Moms Tomatoes

I had to use onion and garlic from the grocery store,
but everything else was from her garden.
So, this really is a garden vegetable gazpacho!

Garden Vegetable Gazpacho

It is so nourishing and refreshing!
