Once again, my Mom has been sharing the bounty of her garden with me. When she was overrun with too many tomatoes, cucumbers and green peppers, I knew I had to make garden vegetable gazpacho.


I had to use onion and garlic from the grocery store,
but everything else was from her garden.
So, this really is a garden vegetable gazpacho!

It is so nourishing and refreshing!
Garden Vegetable Gazpacho Recipe
Ingredients
- 4 large tomatoes cored and chunked
- 2 cups diced cucumber peeled and seeded
- 1 cup diced bell pepper green, orange, yellow, or red
- 1 cup diced Vidalia onion
- 1 clove garlic minced
- 2 Tbsp red wine vinegar
- 2 tsp olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 cup water
Directions
- Place vegetables (including garlic) in a large food processor and pulse until pureed.
- Add vinegar, oil, salt, and pepper and pulse for a few seconds to blend.
- Pour into large serving bowl and stir in water, or portion into smaller servings distributing water across servings.
- Chill for at least one hour.
- Garnish with your choice of diced cucumber, toasted croutons, plain yogurt, and sour cream.

I don’t have a garden but it’s on my to do list for next year! I just made the most incredible gazpacho myself. It’s a great summer food!
The vidalia is a good idea in that – I like the idea of the sweeter onion.
It adds a nice flavor without too much onion bite.
This looks awesome – I’ve seen several gazpacho recipes today -it’s the season.
A lot of my local friends who green said their tomatoes weren’t great this year.
Gazpacho is definitely one of my favorite summer meals. I cannot wait for my tomatoes and cucumbers to be ripe so I can get going on making some! This recipe looks great! Thanks for posting 🙂

I received a gazpacho recipe a long time ago from a vegetarian friend and I never tried it. This looks good – I can almost smell the fresh produce through the screen.
