The Secret To Delicious Chicken Recipes

I don’t fix the same meals every week, but every week I usually fix something pasta-based, something with lean ground beef, and something with chicken breast. While I have some great recipes, I tend to get mixed results with chicken–sometimes it’s good, sometimes it’s dry and chewy. But now I think I’ve discovered the secret to delicious chicken recipes!

It all started when I made this recipe for Honey Cashew Chicken.

Although it had too many vegetables for my husband’s tastes, I noticed how moist and tender the chicken was, and bookmarked the recipe as too good to forget.

I tried it again a few weeks later, using a bag of frozen “oriental” mixed vegetables instead of all the fresh vegetables in the recipe. My husband liked it better that way, and the chicken was fantastic again.

Last week, I was making chicken fajitas and decided to conduct an experiment to find out if tossing diced chicken in corn starch is the secret to delicious chicken.

I put 2 Tablespoons of corn starch and 1 Tablespoon of taco seasoning into a releasable bag, cut chicken breasts into fajita-sized strips, put them in the bag, and tossed to coat. Then I stir-fried the chicken in a skillet with 1 Tablespoon of canola oil, added about 3/4 cup frozen, diced onions and a bag of frozen mixed pepper strips, and cooked until everything was heated through.

Once again, the chicken was moist and tender!

  5. ok I’m a vegetarian but the rest of the family is not. I make chicken & meat for them but don’t taste it. They say that my chicken dishes are not the best thing I make. I haven’t tried using corn starch to keep it moist. Perhaps that is the key-thanks! Or they can just make their own dinner!!

  6. I didn’t know that either! My husband isn’t the biggest fan of chicken because it’s always dry. I’m going to try this, I’m a big fan of chicken and veggies, I can usually only get him to eat chicken in enchiladas.

    Although, I’m super into shredded crockpot chicken to throw in my veggies. We’ll see when I can break this habit!

    Although I find that any type of slightly acidic marinade (balsamic vinegar and lemon juice are my go-to’s) helps a lot too!

    That’s an idea – I’ll try it, see how it comes out. I’ve usually done that only when I’m then going to want the corn to thicken the broth I cook it in.

    Mostly, though, it’s just very easy to overcook chicken – especially boneless breast. I cook it lightly, and often simmer instead of dry cooking. (Saute quickly to brown, then add a little water (with seasoning) or broth to finish. And I don’t have dry or tough chicken.

  12. Interesting! I’m always looking for new ways to make chicken. Sometimes you just get bored of chicken so you need something to spice it up. That honey cashew chicken dish sounds delicious!

    I made a cashew chicken recipe that called for dipping the chicken with corn starch before cooking it. I’d never done it before and was skeptical but it was AMAZING!

    I say to you, I certainly get irked while folks think about issues that they just don’t realize about.

    You controlled to hit the nail upon the highest as well as outlined out the whole thing without having side effect , other folks could take a signal.
