What I Ate Wednesday: Kale Chips

Last weekend when my Mom told me that she had a bumper crop of kale and other greens, I was happy to take some off her hands. When I saw how much kale she had, I knew I would have to make kale chips.


Kale chips are very easy to make (see the recipe below), but you can’t rush the process. The kale leaves should be dry before seasoning and baking,
and should be baked until they are completely crisp.

I usually tear the kale into bite-size pieces, but for this batch I decided to use full leaves. That decreased the prep time, but increased the baking time.

Baked Kale Chips

I am going to use some for snacking, but I also plan to crumble generous amounts
into my Egg Beaters omelets to add a super-food punch to my breakfast.

    I made kale chips at dinner, and while I've made them a lot, I couldn't understand why these didn't turn out so well. The kale was from a bag (which I'd never bought before) and now I'm thinking it must not have been dried out well. Thanks for the info!

    Yes! We love kale chips! Although I don't make them as often as I should because we are obsessed with some that we buy from whole foods. I typically sprinkle them with sea salt and parmesan cheese. So good!

  4. I tried making kale chips once – big fail. The pile looked so big that I thought I needed more olive oil than I really did – they tasted OK but didn't really crunch up.

    Wow, I didn't realize you could make Kale chips. Sounds like an easy recipe, and they sure make for a great snack. I love all kinds of chips.
