For this week’s What I Ate Wednesday post, I thought I would share some terrific recipes from other bloggers.
When my husband referred to this Baked Apple Cinnamon Oatmeal from Madeline at Food, Fitness & Family as an “apple crisp” I knew I would be making it again. It is a simple recipe, and an easy way to have “grab-and-go” oatmeal for work–or “apple crisp” for a healthy snack.
Tina’s Tortellini Sausage Soup is one recipe that I really missed during my vegetarian Lent. It was a big hit at my house–and was substantial enough to satisfy my teenage son.
Laura’s Crock Pot Chickpea Curry was a perfect addition to my vegetarian recipe collection, and was a great hearty and spicy dish for an unseasonably cold March.

Mmm, love the idea of sharing other blogger recipes you've tried. One of my favorite's was Laura's spaghetti squash pie (from Sprint 2 the table), a mock spaghetti pie, really yummy!
Great recipes tries! There are so many bloggy recipes I want to try out, the link is endless. My favorite were pumpkin brownies from CCK, I posted about them on my blog too. Too good!
That tortellini soup looks outrageous. I need it in my stomachs immediately. Just clicked the recipe link. I love that it has so much garlic in it. Gonna make it.

I think mine is from Bed Bath and Beyond. Not fancy but it is non-stick.

OMFG! YUM! I totally want a donut pan so I can pour some butternut squash and eggs into it… Even though it's not a real DONUT, just eating food the shape of a donut will trick my taste buds into thinking I robbed a krispy kreme store!
I bought chickpeas last week so that I could make Laura's crockpot recipe and still haven't gotten my act together to do it.

Coco – For the apple/cin baked oatmeal, do you use the Stevia and the coconut milk (regular kind of coconut milk in a can?)?
I modify that recipe to omit the salt and Stevia, and use 1% milk. Also, to make it easier I use 1/2 cup of egg white instead of the egg/white combination and 2 apples even if its more than what the recipe calls for. I have been making a batch every week. I take some to work and Beau eats some for dessert!
