Enjoying Holiday Leftovers For Breakfast

As much as I like cooking my holiday recipes, what I really look forward to at Thanksgiving is my Mom’s cornbread stuffing and whole cranberry sauce. She spoils me by making extra, and some of my favorite ways of enjoying these “leftovers” are for breakfast.

My all-time favorite post-holiday breakfast is
a fried egg with stuffing and cranberry sauce.

Cranberry sauce also is the perfect topping for plain or vanilla yogurt,
and tastes downright indulgent on coconut Chobani.

Celebrate Giving Tuesday With CUCB

Did you know that the Tuesday after Thanksgiving has been designated as Giving Tuesday? I guess now that we’ve given thanks on Thanksgiving, shopped until we dropped on Black Friday, and found some more deals on Cyber Monday, it’s a good time to remember those who are less fortunate.

Are We Having Fun Yet?

A few weeks ago I was riding my bike with my husband, and I was NOT.HAPPY. It was a lovely day, and I was glad to be on my bike, but I was grumpy. As I sifted through my feelings, I realized that I wasn’t having FUN because I wasn’t going FAST.

When I’m on my bike, I like to ride hard. I try to maintain a cadence that keeps my heart rate up. I work hard to power up hills, and then cruise downhill as fast as I can without fearing for my life–or maybe skirting at the edge of a little bit of fear. All that is fun to me. I am amused by people who pedal along at a leisurely pace–as long as I can pass them–but I can’t imagine why they would want to be going so slowly. 😉 Continue reading
