A Healthy Banana Bread Recipe
Bananas are a staple in our house, but we don’t always eat them all before they get overripe. When one or two bananas are past their prime, I peel, slice and freeze them for use in smoothies or “banana soft serve,” but when I’ve got three or more past their prime, I make banana bread. Over the years I’ve developed a healthy banana bread recipe that my husband really likes–he just needs to learn that the “serving size” is not one mini-loaf!
So, what makes this a healthy banana bread recipe? It uses unsweetened applesauce instead of butter or oil, and half of the flour is whole wheat flour. You can make it even healthier by using 1/4 cup egg substitute instead of the egg and using only whole wheat flour. I’ve made both substitutions and you really can’t tell the difference!
My Husband’s Favorite Banana Bread
3-4 ripe bananas
1/4 cup unsweetened applesauce
1 egg
1 tsp vanilla
3/4 cup sugar
1 + 1/2 cups whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Preheat oven to 350 °F. Thoroughly mash the bananas in a large mixing bowl. Add the wet ingredients, stirring well (by hand) after each one. Add the flour in portions, stirring well until evenly mixed in. Add the remaining dry ingredients and stir until everything is evenly mixed in. Portion into four prepared (greased/Pam®-ed) mini-loaf pans. Bake for 25-30 min until toothpick inserted into middle of loaf comes out dry. Cool in pan for 5-10 minutes, then remove to cooling rack.

This is my favourite use for over ripe bananas. I did a blog recently which had a chocolate and banana bread/cake recipe. You should try add plain chocolate, it goes really really well. Glace cherries also work fantastically.

I have the exact same recipe. Although I also add chocolate whey protein and then double the applesauce and add mini chocolate chips. I make mini muffins. I think my calorie tracker app says each muffin has 65 calories. YUM!! It's a household staple here.
I haven't tried adding chocolate protein. I do add chocolate chips once in a while, but my husband prefers it plain.

Yes, the mini loaves cook quickly and more evenly. Mine is the stoneware one from pamperedchef.com – I've had it for ages and love it.
