Breakfast really is my favorite meal of the day. While I love pancakes as much as the next person, I get through the morning better when my breakfast involves eggs. I usually have a fried egg and toast before I go to work, but lately I’ve been getting bored with that combination. Last week I got creative, and enjoyed three new egg breakfast ideas that I’d like to share with you.
Scrambled Eggs In Roasted Pepper Boats
Over the weekend, I quartered and grilled several red, yellow and orange peppers. For breakfast, I heated a few pepper quarters in the microwave while I scrambled my eggs. (I usually use one whole egg and one egg white, and give the other yolk to Tiger Lilly.) I spooned the eggs into the pepper quarters and topped them with a sprinkle of shredded cheddar cheese. Yes, they tasted as good as they look!
Breakfast Tacos
After my 6:00 am spin class on Wednesday (have you entered my RevolveDC giveaway yet?) I got my favorite breakfast at Farmers Fishers Bakers.
Hard-Cooked Egg with Melted Havarti Toast
On Friday, I was back in my own kitchen, but a bit short on time. I sliced a pre-cooked Eggland’s Best egg, and made cheese toast with Havarti cheese and slices of my Mom’s tomatoes.
Simple, but delicious and satisfying.
Speaking of brilliant egg breakfast ideas, I don’t know why I am so hooked on the pre-cooked Eggland’s Best eggs, but I am.
Every few weeks I decide not to buy them because it is so easy to make my own (I could even bake them in the oven!), but then I don’t seem to get around to it. Inevitably, I find myself wishing I had an egg ready to eat for breakfast or ready to pack for a snack at work, and have to scrounge for something else instead, while vowing to pick up a bag on my next grocery store run.

Egglands best are my fave too. I love adding avocado to my eggs. The peppers look good too. I usually cut them up and add them in but that’s a nice variation.

I will have to see if we have Eggland here. I have tried the precooked hard-boiled eggs and found them hind of slimy. I love eggs and I need a breakfast that will travel as I’m one of those people that has to be out of bed for a couple hours before I can eat or I feel sick.

I make hardboiled eggs all the time, so I don’t think that would be my convenience food of choice. I do buy pre-packaged trail mix as I have big eyes when it comes to serving my own portions.
