As much as we love this banana bread recipe, I’ve been making it so much lately that last weekend I just froze our overripe bananas for future use. When I was once again faced with three overripe bananas this weekend, I decided to see if I could find a good recipe for a pumpkin banana bread.
I found this recipe from Gina at SkinnyTaste.com, and when I saw that she based her recipe on her own banana bread recipe, I decided to use some of her ideas to modify my banana bread recipe. These are the ingredients I added to my usual recipe. The full recipe is in the Recipage section below.
My banana bread recipe makes four small loaves, but the added pumpkin, oatmeal and a bit more flour makes more. I decided to make one loaf in my molded twist pan (shown above) and still had enough for one small loaf.
Pumpkin Banana Bread
- YIELD: 1 large loaf or 4+ mini loaves
- PREP: 15 mins
- COOK: 45 mins
- READY IN: 60 mins
Ingredients
- 3 ripe bananas mashed
- 1 cup pumpkin puree
- 1 tub unsweetened applesauce (single serving size)
- 1 egg
- 1/2 cup light brown sugar
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground clove
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 cup old fashioned oats
- 1 3/4 cup whole wheat flour
Instructions
- Preheat oven to 350F.
- Blend wet ingredients, then add spices, then blend in oats and flour. Mix until just blended.
- Spread batter evenly into one large loaf pan or 4 small loaf pans.
- Bake at 350F for 25 minutes (small) or 45 min (large), or until toothpick inserted into center comes out clean.
- Cool in pan for 5 minutes and then remove to cooling rack.
- Enjoy!

ok i totally have all of these ingredients and want to make this! single serve applesauce? how many ounces is that?
The single serve cups are a bit more than 1/4 cup, but 1/4 cup is fine.
I’m butting in here — but I use single serve apple sauce all the time — it’s 4 ounces per cup. BTW, this bread looks so good and the shape of it is really neat! Love
Hah! Thanks! I started buying the single serve cups after throwing away too many jars of half-used moldy apple sauce. My original recipe called for 1/4 cup applesauce, and the cups have a bit more, but not enough more to make a difference.
Exactly – moldy applesauce – yuck! Oops, the cups I get are 4 ounce, which is more like 1/2 cup I am sleepy this morning and should not be offering advice 😉
Same here. But that’s what I use, and it’s fine! I used to measure it and try to get someone to finish off the rest but then I figured out that it didn’t really matter. Banana Bread (and Pumpkin Banana Bread) withstands a lot of variations!
This looks delicious and I hadn’t thought about adding pumpkin to banana bread! I love the idea of using single serve applesauce. That’s genius. I feel like there’s always a jar open in our refrigerator and then it goes bad about halfway through.

Jo, my mom got it for me but I think it’s from Sharper Image? At least that’s what is printed on the plastic I keep it in to prevent scratching (it’s a non-stick pan).
OMG OMG OMG I bet that smelt SOOOOOOOO good as it baked! I buy candles to make my house smell like that loaf! LOL! And there you go, another way to use pumpkin 😀

That bread is beautiful, I love the twist pan! I switch between regular banana bread and chocolate chip banana bread just about every week. We’ll have to try this recipe out too. My favorite pumpkin recipe is Chocolate Chip Pumpkin Cookies. Yum!

I added chocolate chips to this last night for dessert and everyone loved it — I do that with regular banana bread most of the time too!
