No Fireworks But We Can Have Coffee

Happy July 4th Weekend! Apparently there will be a fireworks display in Washington, D.C., but I won’t be going to see them. That said, Deborah and I are happy to host the July Ultimate Coffee Date. We invite everyone to join in from wherever they may be this holiday weekend–at home, in the mountains, at the lake, at the beach ….

No Fireworks But We Can Have Coffee

If we were having coffee, I would offer you a piece of baked blueberry pancakes. I first heard about this brilliant idea from Deborah. I love pancakes, but have no patience for making them on the stove. I’ve been using the Kodiak Lemon Poppy Seed mix and adding fresh blueberries. So yummy, I don’t even want syrup.

This recipe is fool-proof and delicious.

While you noshed on that, if we were having coffee  I would show you a few of my favorite wedding photos.

married couple

It wasn’t the wedding my son and his fiancee had been planning, but the weather was perfect, the minister was great, and it felt so good to be celebrating love and new beginnings in these crazy COVID-19 times.

If you look closely, you can see my daughter watching via FaceTime.

We focused on staying apart rather than wearing masks, and enjoyed brunch with socially-distant seating on our patio.

Family wedding photo

Even with the minister and photographer,
we stayed within “groups of up to 10” guidelines.

If we were having coffee, I would ply you with a piece of Aunt Betty’s pound cake while I showed you more photos. If you listen to Sam Sanders’ It’s Been A Minute podcast, you know what I’m talking about! It lives up to its reputation–even my son was impressed–although his lemon pound cake is still my favorite.

I am so glad it turned out well!

Before you go, if we were having coffee,I would ask if you are planning to watch any fireworks displays this year. Honestly, my husband isn’t a fan anyway–he’d always rather stay home and watch them on t.v. Of course this year, we may be watching Hamilton instead! Which brings me to my next topic.

If we were having coffee, I would ask if you are planning to subscribe to Disney+ and watch Hamilton? I sure am!

  1. Wendy says:

Congrats to your daughter and new son-in-law! My former medical assistant also had a backyard wedding in lieu of her planned big event. I guess its good to see them doing what is really important vs having a giant wedding. What a tough time we’re in!!

    • Coco says:

Thanks! It’s actually my son and new daughter-in-law. 🙂 Realized I didn’t make that clear in the post and I guess we stood on the “wrong” side of the “aisle” — that’s what happens when people wing it without their wedding planner. 😛

  2. Kim at Running on the Fly says:

The wedding pics look beautiful! Congrats, again, to everyone 😉 We might drive 20 minutes to a nearby lake for their fireworks…we’ll probably have to stay in our car (or become some mosquitoes’ evening snack), but that’s the reality this year. Our town has a parade every year, and they’re doing it virtual. Not sure how exciting that will be…

    • Coco says:

That sounds like fun — as long as you keep out the mosquitoes! I heard about a drive-through parade, where the”floats” are stationary and people drive by. I guess it could kind of be like a Disney ride?

  3. Marcia says:

Congrats and best wishes to your son and his new wife! Looks like everything turned out beautifully in spite of the restrictions and I love that your daughter could at least watch live! I’ve got an angel cake sitting here for my hubby’s birthday. It’s his fave. I don’t think there are any fireworks displays in our area at all.

    • Coco says:

This was the opposite of an angel food cake. 6 eggs! This is not the year for fireworks — at least not in most areas.

  4. Catrina says:

Ah, the photos! I was waiting for them! They are great!
It looks like you all had a fabulous day – the newlyweds looks so happy.

Our fireworks will happen on 1 August, the Swiss national day. For environmental reasons many have now switched to drone-shows. They light up in the dark and I find it prettier than the fireworks. Also, it leaves less pollution in the air and doesn’t scare the animals that much.

    • Coco says:

It really was a sweet day, and yes, they are young and in love. <3
Oh, a drone show sounds really cool. Was that technology used for the last olympics? I remember something like that.

  5. congrats on the wedding! I am sure you were all disappointed that they could not have the wedding celebration that they planned right now. everyone looks very happy and that’s all that matters. They will have great stories to tell their kids! I saw an article yesterday in the Wash post saying that people should not come down to watch the fireworks. The next article was a guide to watching the DC fireworks. Talk about mixed messages! We have a free trial of Disney bc we recently bought new phones I have not seen it yet so I will be watching at some point this weekend. Hope to see you soon!

    • Coco says:

Yes, the DC fireworks are a battle between Trump and the D.C. government, although I would think you could spread out a blanket and stay 6 feet apart from others as long as you don’t take Metro to get there. I hear the Park Service will be handing out masks — which will probably just end up as more litter. 😛

  6. Best wishes to your son and daughter-in-law! It sounds like it was a great day even if it wasn’t what they had planned.

No fireworks here but there will be Hamilton! I had planned to cancel my Disney+ subscription after the Mandalorian but now I’m glad we kept it!

    • Coco says:

Hah! Disney is going to break records I’m sure. It was a lovely day — and nice to socialize with her family even though we sat apart on our patio.

  7. Darlene says:

Congrats to your son. Looks like a nice day and one to remember.

I love fireworks and I always watch them (My hubby could care). I am sad that they are cancelled here.

I am debating about signing onto Disney Plus just for TODAY!! But i LOVEd Hamilton.

Your food is making me hungry. I’ve been on an ice cream kick…too hot to bake!

    • Coco says:

I usually love fireworks too! There were a few years I’d take my kids with a friend and her kids, and leave him home to watch on tv. 😛

Ice cream and cake go well together ….

  8. We almost always watch the fireworks on TV so this year will be no different for us. We plan to start our day on a 52-mile bike ride in Frederick, MD that my husband set up with his Worldgate riding group. I’m a little nervous because I’m afraid that I won’t be able to keep up with them.

Congrats to your son and his new bride! These are different times indeed!

Thanks for the linkup and have a great holiday weekend!

  9. Congratulations to your son and his new wife! What a crazy time to get married.

We don’t do fireworks – I think I’ve seen the DC ones twice in the 25 years I’ve lived here as an adult. One year we got to watch from the rooftop of Beer Geek’s office and that was amazing. I could never go back to sitting on a blanket surrounded by a ridiculous number of people (even if no covid going on…)

    • Coco says:

The picture above was from a downtown roof top viewing. It was amazing. Too bad it was before iPhone cameras were amazing too. 😉

  10. Farrah says:

Ooo, I’ve never tried baked pancakes but I love the idea too! That looks super good!

Congrats to your son and your new daughter-in-law!! <3 The wedding photos are beautiful!

  11. Congrats on the wedding! It looked lovely and will certainly be memorable and a story to tell in the years to come.

I have to try the baked pancakes! I love Kodiak Cakes but pancakes can be messy. We did master them in quarantine!

We’ll see fireworks whether we want to or not – people set them off all over around here!

    • Coco says:

It would be fun to see them out your window — in the a/c with no bugs or viruses around! The Kodiak baked pancakes work really well. I tried with Bisquick today and they tasted too salty.

  12. Laurie says:

People come from miles around each year to see our little town’s fireworks. They are so good. This year, they are canceled. I can’t say I am disappointed.

Congratulations to your son and daughter-in-law. Their wedding, while it wasn’t what they were originally planning for, looks beautiful!

    • Coco says:

It’s a good year to not have people driving from miles around. I saw that PA is one of the few states will a relatively low number of cases (along with the rest of the northeast, but not bordering states MD or OH, so best to keep us out. 😉

The wedding was paired down to the essentials – including champagne for toasting. I’m glad her parents and sister made it.

  13. Lisa says:

So glad the wedding went well and you enjoyed the day! I heard some horror stories of large weddings taking place recently with 80 people getting COVID. So its smart to keep it small!
I definitely want to try those baked pancakes! Cooking them on the stove is so much work.

    • Coco says:

This is not the year for big weddings, or big gatherings of any kind, but they didn’t want to wait another year to actually be married. I’m not sure what the celebration next year will be called. There probably will be a lot of them so I’m sure someone will come up with a catchy name.

  14. runswithpugs says:

    Cannot WAIT for Hamilton. Squeee!

What a beautiful wedding. It might not be what they wanted, but it looks perfect all the same.

So our local fireworks are canceled, but they are still having shutttles to the beach? I don’t know. I’m staying home.

    • Coco says:

OK, Florida makes no sense! You are wise to stay home with cases rising around you. From my perspective the wedding was perfect, but of course we wish all of our family and their friends could have been there.

  15. I think there are a lot of backyard weddings going on right now — and I think they’ll be more memorable because of it. Your son & DIL might not appreciate it as much right now, but over the years I bet they look back on it very fondly — more so than a big church wedding!

Now you got me thinking about how to get Disney Plus . . . we use a Tivo & they don’t get it!

  16. Congrats on gaining a new daughter in law! The wedding looked lovely! Best wishes to your son!

  17. kookyrunner says:

Love the pancake idea – I will need to try that! Congratulations to your son and daughter-in-law. I know it wasn’t what was originally planned but I love that they were still able to have a small ceremony surrounded by family.

I don’t have Disney+ but Hamilton has been all over my social media timelines today and I heard that it was really good.

My city is having a fireworks display as well, but there won’t be any social gathering to view them. They are encouraging everyone to enjoy the display from home. Personally I think the money could be spent on something else – like PPE for our hospitals.

    • Coco says:

True! I think some celebration is good if people are encouraged to be safe, but when budgets are cut will it have been worth it?

  18. Aww, Congratulations to your son and new daughter!! All of these small wedding ceremony pictures have me feeling nostalgic for times long past and pictures from my grandparents and great grandparents- when it was just a handful of people at the church and a small gathering at home.

    • Coco says:

That’s a good point. I know they want a big celebration with their friends and all family, but for now they have each other and that’s what matters.

  19. Denise says:

I’m thinking a lot of people are saving big money on weddings this year! Congrats to your son and daughter in-law.
We usually stay home and do fireworks on our street but passed on it this year. We did go for a bike ride and join in on a bike parade around the neighborhood which was so much fun!

    • Coco says:

Hopefully everyone was able to get their money back. 😉 Even so it’s a lot of work to do all that planning and then have to cancel and reschedule again.

      Thanks for stopping by.
