My little tomato plants aren’t getting enough sun to yield any ripe tomatoes, but luckily my Mom and my neighbor have bountiful crops and are sharing. I love to make gazpacho (see my favorite recipes here and here) but my husband isn’t a fan, so I decided to make a tomato tart.

Tomato Tart Ingredients
- 1 sheet frozen puff pastry dough, thawed
- 2 large tomatoes, thinly sliced
- salt
- a few rings of Vidalia onion, thinly sliced
- 8-10 leaves fresh basil, minced
- leaves from 4 sprigs fresh thyme
- 4-6 oz shredded mozarella cheese
- 2 oz crumbled feta cheese
- olive oil

Tomato Tart Directions
- Preheat oven to 400°F.
- Place tomatoes in a single layer on a plate layered with paper towels, sprinkle with salt, let sit for 30 min, and gently blot with paper towels to remove excess water.
- Roll out puff pastry dough to 14 X 14 square or 14-16″ round, place on baking sheet or pizza stone, crimp edges to form a crust.
- Bake for 12-14 minutes until golden.
This was my first time using puff pastry dough and I shrieked when I opened the oven and saw the giant puff! I was worried but it collapsed quickly as it cooled. - Sprinkle baked pastry with cheeses, arrange tomatoes in a single layer, scatter onion on top of tomatoes, sprinkle on the herbs and drizzle with olive oil.
- Bake for 12-14 minutes until the cheese is melted.
It was delicious!

Now I only have a few tomatoes left, but hopefully by next weekend my Mom will have enough new tomatoes for that gazpacho!

Sounds great! I’ve never tried that salting trick to remove excess water from tomatoes. I’ll have to give it a try. The excess liquid is the reason I generally don’t like tomato slices on pizza.

There is nothing better than home grown tomatoes. My tomatoes didn’t turn out well this year. As a matter of fact, my garden didn’t do well at all. 🙁

I’ve never made a tomato tart. This looks delicious. Thanks for the tip about salting the tomatoes. I like to use them on pizzas and they can get a little watery.
Jersey tomatoes are SO juicy and cheap right now – I need to try this out! It had my name all over!
