Last Sunday I ad-libbed an individual meatloaf recipe that met with my husband’s approval. Since we both want to have it again, I figure it’s worth sharing. (If you want to see what else I ate on Sunday, check out my What I Ate Wednesday post here.)
The recipe is based on the meatloaf recipe in my Cooking Light 5 Ingredient 15 Minute Cookbook.

While we really like the Cooking Light recipe, I was in the mood for something different. I made a number of modifications–including adding diced baby bella mushrooms for extra nutritional punch–and am happy that they all worked out!
Healthy Individual Meatloaf Recipe
Ingredients
- 1 lb lean ground beef
- 1/4 cup frozen diced onion, partially thawed and pressed of water
- 1 cup diced baby bella mushrooms
- 1/4 cup Panko crumbs
- 1 tsp Penzey’s Tsardust spice blend
- 1 egg
- 1/4 cup Teriyaki stir-fry sauce

Directions
- Preheat oven to 400F
- Prepare a broiler pan by lining the bottom part with foil and spraying the top part with non-stick spray
- Thaw frozen diced onion between paper towels, and press out excess water
- Wash, slice and dice enough baby bella mushrooms to yield about 1 cup diced
- Add onion, mushrooms, Panko crumbs, spice blend, egg, and stir-fry sauce to large bowl and stir to blend well
- Blend in ground beef, using a spoon or your hands
- Form mixture into four individual meatloaf shapes (like large burgers) and space apart on prepared broiler pan
- Bake at 400F for 30-45 min, until cooked thoroughly

Finally, a meatloaf recipe that calls for beef! I always feel like a dope for trying to figure out how to use actual beef in a way that’s true to the product, unique, and not unhealthy… I feel like ground turkey or pork is where everybody else is at for recipes like this, but sometimes I just want beef. Thanks for sharing (and satisfying a craving!).
Yeah, my family is over ground turkey, and organic ground beef is easier to find so I am cooking with beef again.
I often throw together a quick meatloaf for the rest of the family but have never used teriaki sauce. That would be a nice change to the bbq sauce I usually use.
I made a very similar recipe last night. I have a house full of men and they want meat! I make mine into large meatballs, which I pan fry and then completely rinse and add a little sauce. It’s so much faster than cooking a traditional meatloaf.
The smaller size helps these cook faster too. They are really like large burgers, but no bun. 😉
I have an allergy to beef- have you tried it with turkey or chicken?
Yep! Works great with ground turkey. Ground turkey breast might need adjustments since it will be drier.
This looks good – I like that it isn’t covered in sauce! I’m not a huge meatloaf fan but my boys all love it so…
INDIVIDUAL is the key word here – ALL for it because I do NOT like to share food 😉
An added bonus! And necessary when my son is around to make sure I get some too.
