Although spring is finally in the air, I am still enjoying making and eating soups. This Spring Pea Soup recipe can be served hot or cold, and would make a great side dish at Easter dinner or a spring brunch.
The recipe is based on Ina Garten’s Fresh Pea Soup recipe, but I used frozen peas and made a few other changes.
Spring Pea Soup Recipe
Ingredients
- 1 Tbsp unsalted butter
- 1 Tbsp canola oil
- 1 medium onion, chopped
- 2 leeks, sliced thinly and quartered
- 32 oz carton College Inn White Wine and Herb Culinary Broth*
- 1 tsp dried tarragon
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 2 10 oz. bags frozen peas
*To make the recipe vegetarian, use a vegetable broth instead.

Directions
- Melt butter with oil in Dutch oven
- Add onion and leeks and sautee for 10 minutes, until onion is soft
- Add broth and seasonsing and bring to boil
- Add frozen peas and cook for about 3 minutes
- Transfer to blender or use immersion blender to puree
- Garnish with a sprinkle of Parmesan cheese or a dollop of plain yogurt
I served this as a side dish with chicken and rice, and was delighted when my husband scraped the bottom of his bowl!

My hubby loves pea soup but always put ham in it! Haven’t made it in a while but I was all about soup this winter (which is still going on into spring)
Split pea and ham soup is a classic, but this uses the little green peas.

I love pea soup! Even though canned peas are the only food I refuse to eat. I have always used dried split peas, I wonder how different it would taste with frozen peas. I think I’ll definitely try adding leeks the next time I make a pot. That sounds delicious!
I do think the leeks add a nice depth of flavor.

I have nevre made pea soup, but I have often thought about it. I loved that you used leeks, my dad used to always use those in recipes, but I forget about them now! Good idea though, and thanks for joining us today friend 🙂
