I have a hard time remembering to photograph my food for a full What I Ate Wednesday post, but on Sunday I decided the accountability would help me get back on track after a week of conference meals and restaurant dinners. So, for this What I Ate Wednesday post I’m sharing what I ate last Sunday.
I started my day with my new favorite way to have toast–
sprinkled with hemp hearts.
And lots of coffee of course!
After church I ate a Chia Bar in the car as I drove to the park
for my weekend long run.
I think I was at mile 4 when I finally freed the last chia seed from my teeth!
My post-run lunch was another favorite–
a slice of leftover pizza with a sunny side-up egg.
I also had a grapefruit straight up!
A few hours later–
after going to the grocery store and before tackling our tax paperwork–
I had a cup of tea and a chocolate muffin.
This is one of my favorite guilt-free chocolatey snacks.
They sell them in the frozen organic section of my grocery store.
The tax stuff wore me out, but I still wanted to get some housework done,
so I had a single-serving bag of microwave popcorn to tied me over to dinner.
For dinner, I made a new individual meatloaf recipe,
roasted potato wedges, and a salad.
After doing the dishes, preparing my overnight oats, and setting up the coffee maker for the morning, I relaxed with my usual ice cream bar for dessert.
This was a pretty typical Sunday food-wise, but I know my commitment to document everything I ate made me extra vigilant about having healthy snacks and helped me ignore the chips and salsa in the house!

Do you find it harder to eat right on the weekends?
WAIT there are no sugar added KLONDIKE BARS!?
I may need to investigate that for the NO SUGAR ADDED 🙂 child.
I do find it harder to eat well on the weekend bc we usually go out to dinner both nights. I try to add plenty of veggies into breakfast in an omelet to start out right. That helps!
I just got back from a conference myself and dang it is tough! The weekends are harder because I have to eat with the hubby all weekend so I sometimes splurge a little more. And you can’t start the day without bacon on the weekends per the hubby 🙂
Oh gosh, he sounds like my son. I do like bacon, but I hate how it makes the house smell like grease.
Sugar free klondike bars?! Be still my Diabetic heart!!
I have never seen those chocolate muffins. They look amazing, and they are GF so I can have them. I’ll keep an eye out. Thanks for sharing.
They are so good – I thaw/heat them in the microwave for 20-30 seconds and savor with a cup of tea!
Is it weird I kind of enjoy finding chia seeds in my teeth? Yes it is. Great eats!

Yum, pizza. My kids had pizza last night and there are leftovers in the fridge. But, I’ve been very focused lately and know that pizza can wait for me for a while. (did that even make sense)
I find it hard to eat well whenever I’m home which is all the time! Too many snacks 🙂
I’ve never tried hemp hearts but I have a friend that keeps trying to convince me to. That meatloaf and potatoes look delicious! I generally try to avoid snacking, but it’s difficult sometimes, so I always make sure I have vegetables and fruit on hand in case I want something.
I love those chia bars! And leftover pizza with a side of egg is just brilliant.
