Bananas are one of my grocery store staples, and while my husband usually eats one every day, every few weeks we end up with overripe bananas that are destined for banana bread. Since I make banana bread so frequently, I thought I would put together a collection of my favorite healthy banana bread recipes.
I usually make what I call My Husband’s Favorite Banana Bread.
Another favorite banana bread variation is this pumpkin banana bread.

This weekend I took my updated banana bread recipe, used it to make muffins,
and added streusel topping leftover from my blueberry crisp.
I used half the batter to make blueberry banana bread mini muffins.
They were so moist I was afraid they’d get moldy, but they were gone by the next day! 🙂

Healthy Banana Bread
A nearly fat-free banana bread recipe made with whole wheat flour and applesauce.
- 3-4 overripe bananas
- 1/4 cup unsweetened applesauce (or 1 single-serving tub)
- 1 egg
- 1 tsp vanilla
- 3/4 cup sugar
- 1.5 cups whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- Preheat over to 350F.
- Prepare muffin pans or loaf pans with cooking spray.
- Mash bananas in large bowl.
- Add applesauce, egg, and vanilla and mix well.
- Add sugar and mix until incorporated.
- Gradually add flour, baking powder, and baking soda, and stir until thoroughly blended.
- Spoon into loaf pan(s).
- Bake at 350F until toothpick inserted into middle comes out clean.
- (20 min for muffins, 30-35 minutes for small loaves, 45 minutes for large loaf)

Pumpkin banana bread sounds amazing.
While I am not ready for back to school I am ready for fall weather, scarves & boots, and pumpkin everything.
I’ve got 7 bananas sitting on the counter, I think I’ll wait for a few of them to go brown because it’s been ages since I last made some banana bread. Love it fresh out of the oven with a bit of butter! 🙂
