I usually have some variation of an Eggbeaters omelet and toast for breakfast.
But last week I wasn’t in the mood for toast.
I had a package of Trader Joe’s steamed lentils in the fridge,
and I thought they might make a good base for a fried egg.
When I saw that a generous 100g/120 calorie serving would give me 8g fiber and 9g of protein, I decided it was worth a try. All week, I tried to cook my egg just right–so the yolk was mostly cooked but just running enough to ooze into the lentils.
Do you ever experiment with unusual breakfast ideas?
