Breakfast Bonanza!

I love breakfast. For me, it really is “the most important meal of the day” as far as getting my day off to a good start. Plus, I love all breakfast foods–cereal, oatmeal, toast, eggs, pancakes, waffles, bacon, sausage–you name it!

I prefer to eat my breakfast in two parts, about half before I leave the house for work and the other half mid-morning. Since I have mild hypoglycemia, it is better for me to eat every few hours. Plus, while I love breakfast, I don’t like starting the day feeling stuffed and bloated from a big meal.

My first breakfast is usually an omelette made with 1/2 cup EggBeaters® and 1 egg white. I usually fold in some sort of veggie–broccoli slaw, leftover diced steamed broccoli, baby spinach, etc.–and sprinkle with a bit of shredded parmesan cheese.

I also have a piece of whole grain toast (usually Arnold® Flax & Fiber) with a schmear of Promise® Light and a generous sprinkling of cinnamon. I find this very filling and a caloric bargain at about 200-250 calories.

My second breakfast varies with my day. My favorite right now is oatmeal that I make in the microwave with 1/3 cup old fashioned oats and 2/3+ cup water, and stir in 1 small box raisins, a generous 1/2 Tbsp peanut butter and 1/3 cup low-fat milk.

Delicious and very filling and another caloric bargain at about 250 calories.

If I have a busy day at work and need to multi-task, I may have a banana and a 100-calorie pack of almonds:

or a Luna Bar (Peanut Butter Cookie, Lemon Zest, and Chocolate Peppermint Stick are my favorite).

This Sunday I wasn’t in the mood for my usual omelette and toast, and decided to fix myself oatmeal before church. As much as I love it mid-morning and usually can finish the whole bowl, it was too much volume for my stomach at 8:00 am. It left me feeling bloated for a long time. And, worst of all, I was too full to enjoy more than one cup of coffee! So, I think I need to stick with my omelette and toast combination first thing in the morning.

This weekend I saw the new Vitalicious® egg sandwiches at the grocery store.

They are frozen and made for microwaving, and I thought they would be good for days when I need to get to work early and eat my “first” breakfast at the office. I used to get the Jimmy Dean® D-Lights Turkey Sausage Muffins but they are pretty expensive (usually $7-8 for a box of 4) for a grocery store purchase, and I’ve since gotten hooked on the Starbucks® reduced-fat turkey bacon, egg white and cheese sandwich:

Reduced-Fat Turkey Bacon with Egg Whites on English Muffin

but those aren’t cheap either, and have 320 calories and 700 mg sodium.

So, I figured the Vitalicious® sandwich was worth a try (although at $4+ for a box of 2, it wasn’t really any cheaper than the Jimmy Dean® sandwiches).

Well, I will eat a lot of things in the name of nutrition (low calorie! high fiber! protein!) but eating this sandwich was an experience that I am not looking forward to repeating. It was actually as I was eating it that I decided to do this review. I ate more slowly and tried to figure out why I didn’t like it, but it was hard to pinpoint. It was a bit mushy, but the texture wasn’t really offensive or that unusual for a microwaved frozen sandwich. The egg part was really tasteless (these sandwiches have 350 mg sodium, was that the problem?), and the cheese didn’t really seem to add much flavor. Maybe it was the bacon I missed?

Since I still have one sandwich left, I will have to figure out how to make it taste better. Aside from adding my own bacon, I could try slipping in some sliced tomato or even salsa.

Do you eat the same thing for breakfast every day?

Have you ever had a breakfast disaster?

  1. I totally split my breakfast into two, and breakfast part 1 usually involves egg beaters and veggies. It's like we were separated at birth.

Coco- lean pockets makes and egg, cheese and applewood bacon sandwich that is pretty delicious and 290 calories with 480g of sodium and 12g of protein. I'm a big fan and am actually getting hungry thinking about these… 🙂

  3. I could eat breakfast for 3 meals a day. I love it! I usually have oatmeal with several options of mix ins. Sometimes I do eggs. I love the Starbucks breakfast sandwiches. I don't usually do the store bought stuff, but mainly because I don't have to rush out to an office.

My kids' favorite meal is breakfast for dinner. I make some great whole wheat buttermilk pancakes that I usually keep a supply of in the freezer. I might need one as a snack today. Yum….

EEeek, thanks for the review on the nasty egg sandwhich! That sorta thing I don't think I'd buy in the first place, I always look at that kind of thing as, "I can make that myself at home, why would one need a frozen sandwhich?". But I guess, there's busy peeps in the world!
One of my favorite breakfasts is scrambled eggs with a drizzle of syrup & salt! YUM!!

Yeah, having to eat at the office sometimes makes me willing to try things I wouldn't usually be interested in. Now that we have a Starbucks downstairs (and now that Starbucks has more than pastries) I don't usually bother with anything else. I will even get their breakfast sandwich or oatmeal for dinner if I am stuck at work late.

Smart Ones makes frozen sandwiches like that. The eggwhite and cheese one is 210 calories, 5 g fat, 610 mg sodium, 13 g protein. Only 2g fiber and a lot more sodium–but they DO TASTE GOOD.

Disappointing about Vitalicious since I love their chocolate vitatops.

PS my "Reese's" oatmeal is Irish oatmeal, water, a little cocoa powder, a few chocolate chips melted in, some PB2 powdered peanut butter, and a little maple syrup and/or raisins to sweeten–you might enjoy that!

    • Coco says:

Hmm. I'm not sure I want to try your oatmeal. It could be too addictive! I like most of the Vitamuffins too. Just had a chocolate one for "dessert" tonight.

I'm from the southern hemisphere and wondering about eggbeaters? is it like egg in a carton ready to go and make scrambled eggs or something? and in Australia JIF is a cleaning product lol I'm enjoying your blog by the way 🙂

    • Coco says:

Hah! Even with globalization some differences remain. Egg beaters are a low-cholesterol liquid egg product that comes in a carton. It is made with mostly egg whites, I guess, although it is yellow and has more flavor than egg whites (although it still benefits from add-ins like veggies and a bit of grated cheese). JIF is peanut butter – is that a staple food in Australia like it is in America?

I'm so glad you are enjoying my blog!

I didn't use to even like breakfast but I love it now. I now love my 1 whole poached egg with 1/4 C oatmeal, berries, and walnuts. I hardly ever vary but when I do it is to scramble an egg with spinach and mushrooms. When rushed for time I may replace the oatmeal with toast. I like my oatmeal cooked for only 1min 10 seconds and then drained. Love the whole little kernels. Glad I finished breakfast or I would be hungry writing this. It sticks with me until 10:30 or 11:00 when it is time for a snack.

  8. Yum Yucky says:

I am idiot. Never thought to use egg beaters with my beloved broccoli. Always you use spinach and nothing else. Doh!

  10. Thanks for sharing this….while I dont think an omelet will work for me (just not big on them) it still sends me to the same conclusion of protein …for now I think I am going to try and increase my protein and add in some fruit and save the carbs for a snack later in the morning …we shall see how it goes
