Favorite Spring Recipes

Today’s Friday Five topic takes a break from the usual running theme, but since most runners love to eat, sharing our favorite spring recipes makes a lot of sense. 

Spring Recipes
Many of these recipes are based on eggs, both because I love egg dishes and because if eggs have a season, it’s got to be spring, right? 

1. Quiche. I enjoy this lighter quiche recipe year-round, but it’s perfect for a spring brunch.

2. Raw Brussels Sprouts Salad. This recipe makes most of my “favorites” list because it is so good. And, now that I know Trader Joe’s sells bags of pre-shredded Brussels sprouts, I don’t have to wait for a special occasion to make it.

3. Spring Pea Soup. I love the bright green color and pure flavor of this spring pea soup. It would be perfect for Easter dinner or a spring brunch. (And, it works with frozen peas, so you don’t have to spend hours hulling peas!)

4. Deviled Eggs. If you celebrate Easter, you have got to make these deviled egg chicks!

5. Spritz Cookies. If you dye eggs and have more than you can eat, this cookie recipe uses cooked egg yolks. Sounds crazy, but they are delicious.

    Love the deviled egg chicks, I will definitely copy that. I always make deviled eggs for spring parties, and these are so cute!

  8. Those deviled eggs are so cute!!!!!! I planted brussel sprouts in my garden- so I would love to make that salad! Great recipes! I think my favorite is pasta sald with whatever spring veggies and herbs are ripe and handy! Happy Friday!

      The hardest part was slicing the bottoms so they would stand flat. Making baked hard-cooks eggs and sitting them up in a muffin tin would make that part easier.

    I have been looking for a good pea soup recipe, so I will have to try yours. I love pea soup but have never been able to make it successfully.

  15. I love deviled eggs but those chicks are way too much work ! I usually put crab meet, a dollop of home made mayo and then shred the yolks. So yummy and always a hit with guests.

  17. For me spring food is all about Easter which is all about sweets:
    jelly beans
    Cadbury Creme Eggs
    Mini Robins Eggs
    Reese’s Eggs
    and every other treat!!!

    I am trying to be good and resist a bit this year.
