Apple Pie Baked Oatmeal

I ate my fill of turkey and stuffing over Thanksgiving weekend, but I never get enough apple pie. I won’t bake pie again until Christmas, but this baked oatmeal recipe includes the best flavors of apple pie and is a nutritious and delicious way to tide me over until our next holiday celebration.

Apple Pie Baked Oatmeal
Serve with a splash of milk, or top with yogurt (plain, vanilla or coconut) or leftover cranberry sauce. 

Apple Pie Baked Oatmeal Ingredients

  • 2 medium apples, peeled and diced  (about 2 apples)
  • 1/2 cup pecan pieces, crushed 
  • 2 cups old fashioned oats
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 eggs
  • 1 tsp vanilla
  • 2 cup unsweetened vanilla almond milk
    (or 1 cup water and 1 cup milk)
  • 12 pecan halves (optional)

Apple Pie Baked Oatmeal Directions 

  • Pre-heat oven to 350F
  • Prepare 8.5 x 11 baking dish by spraying with cooking spray
  • Combine oatmeal and spices in a large bowl, and stir to mix 
  • Fold in apples and pecan pieces
  • In a small bowl, whisk eggs, vanilla, and milk together, then add to oatmeal mixture
  • Pour into prepared baking dish, using spatula to distribute evenly
  • Top with pecan halves if desired 
  • Bake for 45-50 min until oatmeal is set and lightly golden

Apple Pie Baked Oatmeal

I like to make baked oatmeal on Sunday, and pack up individual slices to take to work for a mid-morning snack. They re-heat well in the microwave, and also taste good at room temperature.

  2. What a delicious idea! Of course, I’ll have to leave out the nuts so I don’t send my boys into the ER (they are allergic). That would add some excitement to the holiday season, wouldn’t it?

      Yeah, probably not the kind of excitement you need. If you omit the nuts, add raisins (1/2 cup) or fresh cranberries (1 cup) for more flavor.

  10. I made mini apple cranberry pies with my apple cranberry relish and phyllo dough shells for Thanksgiving. Delicious! I still can’t believe how many apples we went through after Michigan!

      Oh, I will have to add cranberries the next time I make this. I’ve been topping it with cranberry sauce, but I bet they would be great baked in.

    This is such a perfect idea! Nutritious and delicious! Like you, I love apple pie (especially with vanilla ice cream on top). It’s hard to stay healthy during the holidays, but I think this recipe will help tide me over until the real feasting begins.

      Yeah, I save my sugar for dessert. The only sweetness comes from the apples and the unsweetened vanilla almond milk (which tastes a bit sweet to me).
