The Boulder Flatirons

Last weekend we visited my daughter in Boulder, Colorado. It was a crazy trip–I got home from Copenhagen on Thursday afternoon, unpacked, did laundry, and re-packed for our 8 am flight on Friday–but it was worth it to see her and celebrate her college graduation. Plus, I never get tired of looking at the Boulder Flatirons.

June Java (Coffee Date)

Thanks for stopping by for this month’s Ultimate Virtual Coffee Date hosted by Jill Conyers, Nikki at Grab Your Kicks and Lynda at Fitness Mom Wine Country. Can I get you a cup of coffee or tea before we catch up?

Virtual Coffee Date

If we were having coffee together, I would tell you that my May was crazy and my June will be crazier. I was out of town last weekend, have to go out of town tomorrow, and have another business trip that will steal half of my weekend the week after next. Next weekend is my only full weekend at “home” but it’s jam packed with the Lawyer’s Have Heart 10K, a special Moms Run This Town spinning class at Revolve, a friend’s 50th birthday party, and Father’s Day! I really don’t glorify busy, but I can’t seem to avoid it.

If we were having coffee together, I would tell you that parenting college-aged children is tough. It is hard not to step in to “fix” their problems, but it so much more rewarding for everyone when we take a step back and support them as they find their own way.

My son’s third smashed iPhone in 18 months.
He’s paying for its replacement–and any others since we’ve been booted
off  the phone insurance. 🙁

If we were having coffee together, I would tell you that I logged over 400,000 steps in May! I did not enter the contest at work because I wanted to give others a chance to win, but June is the last month and it is game on! 😉

Delicious Crockpot Chili With Beans

Now that my son is home from college for the summer (yay!) I am trying to cook dinner on a more regular basis. Managing my work schedule is one challenge, but finding recipes that are easy, at least relatively healthy, and that will satisfy his carnivore taste buds is even harder. Last weekend I was going to make chili for Sunday dinner, but then I saw this recipe for Honey Cashew Chicken on Angela’s weekly meal planning post, and decided to make that instead. I still wanted to have chili, so I decided to try to adapt my usual chili recipe for the crockpot for an easy weeknight dinner.

I pretty much made up this recipe as I went along, but it turned out really well. Not only did my husband have a second helping, he ate leftovers the next night and my son took a serving for lunch at work!

Exploring Copenhagen

Last week I had a business trip to Copenhagen. Although I had four meetings in three days, I still had room in my schedule to start my days with a run. The long daylight hours made me realize how far north Copenhagen is–it was broad daylight at 4:30 am, and the sun didn’t go down until after 10 pm. I also learned that there is a fine line between exploring Copenhagen and getting lost on it’s crooked streets!

On my first morning, I did the same loop I had done on my last vist to Copenhagen. Since it was much lighter in late May than it had been in late January, I was able to get much better pictures this time! Continue reading
