It’s Time For The Ultimate Coffee Date–And Cookies!

Welcome to the December edition of the Ultimate Coffee Date Link Up, where we imagine that we are getting together for coffee or tea (or egg nog?) and share what’s going on in our lives. It’s a chance to get to know each other better and support each other in all our endeavors. Since it’s no fun to have coffee alone, make sure you leave comments on other blogs in the link up, and don’t forget to visit my co-host Deborah at Confessions Of A Mother Runner.

The Ultimate Coffee Date

We’d love for you to use our badge in your coffee date posts–

If you are new to link ups, check out these tips for making the most of them.

If we were having coffee, I would apologize for not having much time to chat. Today is my annual Christmas Cookie Bake-A-Thon day, so I will be spending the day baking delicious cookies. There will be five of us, and we each make two types of cookies plus decorate cut-outs, so I will come home with a great selection of cookies for giving and eating.

Ginger Spice Cookies

I’ll be making my ginger spice cookies
and my eggnog spritz cookies.

Eggnog Spritz Cookies

If we were having coffee, I would whine about having to work next weekend. All weekend. Out of a hotel. In New Jersey. Do you feel sorry for me yet? As much as I love my job, I don’t love when it takes over my weekends. It doesn’t happen very often, but when it does, it sucks.

If we were having coffee, I would ask if you traveled over Thanksgiving weekend, or have any travel plans for December? We aren’t going anywhere, but my daughter will be coming home for Christmas. We visited her a few weeks ago, but it will be nice to have her home again for a few days.

Speaking of which, do you remember me telling you last month that I have been enjoying having my son home but know it won’t last for long? Well, he’s going to be moving out even sooner than I expected, to start a graduate school program in January. While I’m very proud and excited for him, I am not hiding the fact that I will miss him! It’s like going through that empty nest transition all over again.

If we were having coffee, I’d ask if you scored any great Black Friday or Cyber Monday deals, and if your “self” versus “others” spending ratio was as skewed as mine. Oops! 😉

  1. I am so impressed with your baking skills. I have absolutely no patience for baking. Your cookie bake sounds like so much fun.

Where will you be in NJ ? I arrive on Sunday end of afternoon, 30 minutes from Newark.

I have not done any Christmas shopping yet, hope to do most of it today.

I am dreading Empty Nest syndrome, I still have a couple more years.
Thanks for the link up !

You had me at ginger!!! Those cookies look so yummy!!

ugggh working on the weekends..no bueno..yes I feel sorry for you ;(

We traveled to NY over the Thanksgiving holiday to visit my dad. He may be having back surgery this month so that will determine if we visit during the winter break.

Awww the empty nest feeling…I have a few years until that but I can only imagine how that feels. Congrats to him on grad school though!

Ha on skewed spending. I actually didn’t but anything for myself on black Friday. Everything I got was for the kiddies…what is wrong with me-lol!!

    Enjoy your baking!

    • Coco says:

You’re such a good mom! But I think your kids are at an age that easier to buy for. I tihnk my son will be getting “help moving” for Christmas. 🙂

  3. the cookie baking sounds fun my only problem would be trying not to eat them all! I have to make some for next week. This week is soup club 🙂 Still not sure what I am making yet. Always nice to catch up! We need a real coffee date soon

  4. Oh, the cookies!!! I’m hoping to do some baking this weekend after I finish with the last of my holiday decorating. I haven’t done much holiday “buying” yet but have done plenty of online “looking”…..I need to get on that, too.

  5. Definitely no fun to be working over the weekend – especially away from home 🙁

Congrats to your son on grad school – I know you’ll miss him! Is he moving far?

Have fun with all of your baking! Those ginger spice cookies sound so good…care to share the recipe 🙂

    • Coco says:

He is going pretty far away, so visiting him/coming up will be more of a big deal then when he is in Dickinson. I’ll share that recipe this week.

  6. Farrah says:

Those cookies look delicious! <3 where in New Jersey are you going to be?! (That's where I am! 😛 )

I had to work all week through Thanksgiving and Black Friday, so no huge feasts or shopping for me. At least I saved money though, I guess? :p

Super congrats to your son with grad school! It's not the easiest being away from family/home but thank goodness for technology?!

  7. Cookies are the best thing about this season. I should bake some today, too.

  8. Yum! I can’t wait for my baking day. But it’s not for a couple of weeks. I’m sorry you are losing next weekend to work! I can’t imagine how that might be setting you back with your December to-do list! Hope you had a fun day with your cookie friends.

    • Coco says:

When we compare calendars, it’s usually easier for us to find a date earlier in the month when we all are available, and then I stash most cookies in the freezer until closer to Christmas!

  9. Barrie says:

What fun to do a baking day like that! I love Spritz, but really want to try new variations-eggnog sounds great- I am so glad to explore your blog a bit more on your cookie posts!

    • Coco says:

Thanks! Since so many have asked, I’ll share that recipe in my Weekly Wrap post. I think it’s the nutmeg in the dough that makes them special. 🙂

  10. Teresa says:

Your eggnog spritz cookies look wonderful …I love spritz cookies! No black Friday shopping for me, I despise it. However, I do love cyber Monday! I much prefer to shop from the comfort of my couch with a cup of coffee rather than fighting the multitudes! Hope you have a wonderful time with your daughter visiting and with your son before he embarks on a new educational venture. 🙂

  11. Yup, hate it when work takes over the weekend – especially during the holidays! Whine away.

Your cookies look AMAZING. I am the world’s worst baker. I have my cookie exchange today. I make peanut butter fudge every year, because I can and it has a holiday feel. This year, The Husband and I iced “ugly sweater” cookies from Trader Joes, too. We had so much fun. Best $5.99 I’ve spent this holiday season. (Image on Instagram @ericaagran)

I got ALOT of deals – many for myself. Still retail therapy from the election. Only mostly kidding.

Happy December and thanks for the link up!

    • Coco says:

Ha, I don’t think I can afford the amount of retail therapy it would take to get over the election….. I saw that cookie kit at TJs and your creations – so fun! Peanut butter fudge sounds yummy!

  12. Elena says:

Omg those cookies look great. Time to start my baking. Then a nice run to burn it all off. 🙂

  13. I started some Christmas cookie baking this weekend too- one of my favorite holiday activities!

I can’t imagine the ups and downs of grown kids moving on. It feels so far away but I’m sure it feels like time flies by when you’re on the other side of it!

  14. I saw all those Christmas cookie pictures and oh dear heavens they looked amazing.

  15. My Cyber Monday deals are rolling in- it is very obvious that I did the shopping!

  16. Darlene says:

This post is making me so hungry. I used to bake when I was a teacher (pre-running days.)

Now no time. I have to stick to the Starbucks snowmen LOL.

  17. vicki says:

Your bake-a-thon sounds like so much fun! I miss doing something similar with my mom and sister.

  18. Your Cookie Bake-A-Thon sounds like so much fun! I bet you got some amazing cookies…so jealous!

Congrats to your son heading to grad school. I know it’ll be sad to see him go but at least you got some extra bonding time together!

I hope you enjoy the holidays! 🙂
