Keeping Cool With The Ultimate Coffee Date Link Up

Are you enjoying the dog days of summer? We are doing our best to keep cool here, but I still need a cup or two of piping hot coffee before I start my day. I try to drink water the rest of the day, but lately I am really enjoying an ice cold glass of limeade after spending any time outside. Before you head out, please visit my co-host Deborah and comment on other blogs in the link up.

If we were having coffee, I would tell you that this weekend I am in beautiful Lancaster, Pennsylvania for the Farm to Fork Fondo that I’ve been looking forward to since May! We are signed up for the 68 mile Medio Fondo, but after seeing the list of farm stops for the 100 mile Gran Fondo I will be tempted to keep riding. We just may have to drive to Pine View Dairy for some of their ice cream!

If we were having coffee, I would tell you that I’ve been making a batch of gazpacho every weekend. It’s a great way to use up tomatoes that are almost past their prime, and is so refreshing!  

Gazpacho

My basic gazpacho recipe calls for 2 large tomatoes, 1 peeled and seeded cucumber, 1/3 Vidalia onion, 1 T olive oil, 1 T red wine vinegar, and 1 tsp salt. Fresh basil is a great addition, as is a scant cup of diced watermelon. Just toss everything into a food processor or blender, puree until relatively smooth, and chill before serving. 

If we were having coffee, I would ask if you are watching the Olympics, and what your favorite summer Olympics sport is. I’m looking forward to watching cycling, diving, swimming, gymnastics and track and field. Really, I enjoy watching all the athletes do their thing! 

If we were having coffee, I’d ask if you have any plans to see Bad Moms. I’m missing out on a “Bad Moms Girls Night Out” with my Moms Run This Town group, and hope I can find another girlfriend to see it with.

  2. Enjoy your riding this weekend, I bet it is beautiful! I love V-8 juice so I don’t know why I’ve never tried gazpacho- you make it sound easy! I watched the opening ceremonies last night so I am excited to see some more olympic action!

    I’ll have to try that! I saw “Bad Moms” last weekend and thoroughly enjoyed it. I’m sure you have no trouble finding a buddy to go with you.

    I love gymnastics, track and field, swimming and diving. I can’t watch the cycling – the crashes freak me out! Triathlon will be fun to check out this year, too!

  10. I hate I missed having coffee with you Coco, I had an opportunity to take a road trip and a fun filled weekend. That is my excuse and I’m sticking to it! I sure do hope Fall brings a more concrete blogging schedule for me.
    I haven’t heard of gazpacho. Is is like salsa? Do you eat it with chips like a dip?

    In any event – I hope you had a fantastic weekend in Lancaster! I love gazpacho and agree that it’s a great way to use up tomatoes. It’s a perfect recipe for the summertime, too!

    My favorite Olympic sports have always been gymnastics, swimming, and track and field, but this year I’m loving the women’s beach volleyball. Those women are forces of nature!!!

      So sorry! Since I had a business trip I closed it on Sunday just after midnight. Do you usually join Monday? I’ll keep that in mind for next time. Since it will be Labor Day weekend I’ll leave it open through Monday for sure.

    I am not a soup person but your gazpacho recipe sounds really easy and yummy. The Olympics ? While we were in Greece they hardly had any of it on the tv. We are back in France now, and happy to be watching it. We missed the gymnastics though. 🙁
